May 4th, 2014 A Good Sunday
I took some time to prepare my breakfast just right this morning. I enjoyed the process, a much better experience than inhaling a bag of whatever from a drive through. It requires me to slow down and enjoy my food, from preparation to the plate. I love making omelets. I take enormous pride in my omelet making skills. My uncle Jimmy taught me how to make an omelet when I was a pre-teen and I've never lost the touch. I once entertained the idea of offering fresh omelet making services of some kind, somewhere--that's how much I love making them. A well prepared omelet is like a work of art.
I visited a little bit with my oldest daughter Amber this morning before heading to the grocery store for a few things. I tend to gravitate toward a standard list. I'm such a creature of habit. If you browse the food pics on Twitter (@SeanAAnderson) you'll notice I'm pretty much a taco fanatic. Beef tacos, chicken tacos, turkey tacos--I've even tried my own version of fish tacos and a scrambled egg filled breakfast taco. I'm out of Joseph's Pita's for a bit and I couldn't find any today, so I may need to order from www.netrition.com I swear Joseph's Bakery doesn't pay me a dime to promote their 60 calorie pitas!! Although they did send me a nice hand written letter and a complimentary case of pitas a few years ago.
I came home, prepared a turkey burger and an extra large helping of sweet potato fries and watched a documentary on screen writing. I only made it half way through the documentary when I paused and started thinking about yesterday's experience.
This is why I write this blog--I needed to write what I did yesterday for me to make a better connection with it all. Those kinds of deep explorations happen around here occasionally.
I enjoyed a different kind of fish tonight, Swai and some jumbo shrimp. I wasn't too impressed with the Swai. I had never heard of it before. Apparently it's a catfish or a close cousin to the catfish. It was fairly inexpensive, so I thought I might as well give it a shot. I'll explore other methods of preparation and serving because I have the rest of the bag in the freezer.
After another 1.7 mile walk tonight, I headed over to see Noah. Noah will be 10 months old on Tuesday! Seeing him always reminds me of one of the big reasons taking the best care of myself is critically important. I want to have a long and wonderful relationship with him.
It's late and my new mask awaits! I've been sleeping a lot better with this new cpap mask. It's a BIG difference.

So happy to hear you are doing great today. Oouu omelets, always good! I'm glad you posted something about Swai because I've never tried it, and I am not a huge fan of catfish :o/ But being this far from the ocean it's a challenge. I've been trying to cook flounder but it tends to fall apart while cooking, when I get a good recipe I'll let you know for now it's trial and error. Tacos are so great and I actually got brave once and tried shark tacos out at the Palomino's Mexican Restaurant out in Stillwater. Here's to an awesome week! Take care, Jules
ReplyDeleteThank you Julie! I'm spoiled by the talapia loins from Schwan's--it's hands down the best talapia I've found...but it's expensive... I was trying to save money. The Swai was 5.99 for a large bag. I guess it's a "get what you pay for" type thing. I've never tried Palomino's in Stillwater. Shark tacos--sounds interesting. Have a great weekend!
Deletegood one sean...I too am a taco fiend.breakfast burritos, sandwich wraps..I like to eat my food by hand. lol. I have been practicing making the food i do eat super tasty. eating well should not be a punishment.

DeleteHi Sean I was just looking at your members list I remember when I signed on it was only about 200 I am so pleased that you have got back on track its a hard thing to do you have inspired me to get back to basics and have a go again between you and Tony Ponanski I think I have what I need to make my own journey and create a bit of self care. I had a scare at Christmas time I got a skin infection in my left leg really bad I dont think I had ever been so sick in my life and when I read that you had had skin trouble as well it made me so sad because I understood the pain and the shame. Its great that you are posting regularly again remember its a journey and we learn more about ourselves every day and you are so brave to put yourself out there I understand the feelings you are going through dont be afraid to tell it like it is we are all human and its a learning process you have inspired me to have another go and enjoy life as both you and me have so much to live for
ReplyDeleteAnn, thank you for writing. You've been around these pages since nearly the beginning! Tony is such a wonderful soul, isn't he? Love that guy. We do have a lot to live for, Ann. It is a never ending learning experience. Living the journey, loving the journey and not placing an "end date" on it is important. A richer more fulfilling life unfolds along the way. DeleteI recently discovered Swai. I cook it in my Foreman grill. I use either lemon pepper seasoning or sweet mesquite seasoning. Cook for about 4 min & splash vinegar over it. Really tasty.
ReplyDeleteI may need to try the Foreman for the Swai. I tried baking it in the oven wrapped in a foil pouch (started from frozen)... and after nearly an hour it still wasn't done to my liking...so I transferred to a pan to finish. I want to like it because it seems to be such a wonderful value.
